Losing Weight is Hard

When I started my new job (over 2 years ago) I traveled a lot.  Not just to lame cities like middle of nowhere Texas but San Francisco, New York, Seattle, you know citites with really good food!  When you are expensing food, you dont eat sandwiches and water!  My waist paid the price and I gained 15 pounds before I decided to get serious about eating right.  The below pic is at my heaviest.  I know it doesnt look like it but yeah this trip was miserable for me weight wise.  It was hot and, ok, TMI, I could feel the fat rolls.  Never before had I noticed this and I vowed to never again either.


I decided to start with Weight Watchers and it worked really well for me.  I lost 12 pounds in 6 months.  I know that doesnt sound like much fast but I had some factors in this:  I was still traveling for work and sometimes didnt have access to anything remotely healthy to eat (not even a subway yall).  I was already pretty active and I didnt weigh a lot to begin with.  I needed to get rid of the extra weight but when you dont have a lot to lose it takes a little longer.  Below is our next trip 10 pounds lighter later 🙂  I think the biggest difference is in my face, but my legs were thinner too which was nice walking around the parks all day.  Ladies Im sure you follow me.


With Weight Watchers by Thanksgiving I had lost 15 pounds.  My goal was 20 and I was so happy to have reached so close to my goal before the holidays.  I had a half marathon training plan to keep me on track and everything was going really well.  Weight Watchers did really well for me with the point counting and all.  It got me to eat more fruits and veggies since those are (majority of the time) zero points.  I felt better and had more energy yay!!


I stopped WW in January because its like $19/month and since I had already seen great results I thought I could stop and keep it up on my own.  This is when I switched to My Fitness Pal which is a free food tracking app/website.  It seemed fine since it synched with my FitBit.  I could track my exercise and food all in one place.  This is when I started to see the results drop off.  Now when I say results I mean weight, not necessarily the way my body looks.  While I did overall well with the calories my weight didnt change, in fact, I started gaining a few of those pounds back.  I think though Im at the stage of having lost most of the excess easy to lose fat and am now gaining muscle.  I dont know the science or anything behind it but I do know muscle weighs more than fat so the more muscle I gain it stands to reason there will be an increase in the scale.


Truth time yall…being a woman I want to see a small number.  I want to be below this magical number in my head that really means nothing.  I have been and still do struggle with that.  Accepting that the number is just that and its more about how I feel and my clothes fit is more important.  The above picture I felt pretty good about the way everything was looking even though the scale wasnt exactly where I wanted it to be.  I struggle with this on a daily basis and I just wanted to keep it real with everyone.


I dont think it matters at the end of the day if I was using Weight Watchers or My Fitness Pal.  Both are great tools and both have worked for me in one way or another.  I enjoy My Fitness Pal a little more simply because it has tons of foods loaded on it and I dont have to calculate points.  I do find that when I dont use the tool I slip and my weight gain is fat trying to creep back and not muscle.  I dont diet per-say but I do watch what I eat, try the best I can to keep the desserts to a minimum and watch the carbs.  Its tough, there are times where I just want to eat all the things. Sometimes I cave, but most of the time I am able to keep my eye on the prize and that is feeling fantastic about how I feel in my own skin.

I know there is a ton of negative media around body image and thats totally not what this post started out to be but more of a comparison between My Fitness Pal and Weight Watchers.  Sometimes things just get a mind of their own and go where they need to not where you planned.  I think weight issues are a universal truth for everyone is some way.  This is mine that I thought I would share.


I still to this day shy away from tight fitting tops because I still feel pretty self-conscious in them.  The above picture, yeah totally thought I was looking fab then realized nope fat but there’s that negative body image talking again.  Its a work in progress and I am not here to diminish the fact that for some people losing weight is like climbing mount Everest.  I think it is easier for some than others but I also think there is a level of commitment to yourself to be the best you.  I think the best me is fit, in shape and kick ass.  What the best you is may be something different and thats cool too.  You do you!

Another One Bites the Dust

The final countdown has begun for the Plano Hot Air Balloon Festival Half Marathon.  My training this time around has been a little all over the place.  Then again this is my first summer training and it has been a challenge.  My goal today was to get in 14 miles but I ran out of time and was only able to go 11.25.  I had an appointment at 9:30am and needed to be back at the house by 8:15am.  I can only get up so early (5am), I thought I would be able to get more miles in but my hips were really tight today and I needed to take more walk breaks than I wanted to.

20150829_062743That yellow circle in the middle, thats the moon.  When I left the house it was white, when the sun started to come up it turned yellow.  Pretty cool to see that happen actually.  I asked Joe to meet up with me after I had been out for about an hour.  Once he found me I was at mile 7 and was almost out of water.  Covered in sweat but happy to have a reason to stop for a second and get the cramps out of my feet.

6910All in all I did an average pace of about 12min/mile including walks.  Not too bad, not where I want to be but still not bad.  Luckily my appointment today was for a massage.  She really had her work cut out for her with my lower back issues, tight hips and general stress.  I feel so much better now.  Granted I did also take a shot of pickle juice again and took 2 Alieve but still I feel better.  Im going to try for 14 again next weekend then take a lower mileage “rest” the following weekend.  I really want to get one good long run in before the race.  We shall see if life lets me though :)\

Gluten-Free Chocolate Chip Cookies (Foodie Friday #5)

To thank everyone for helping me with the presentations this week I decided to make cookies!  Unfortunately I cant just pick out a favorite and go with it because there are so crazy food allergies in my office.  Gluten for one dairy for another.  I decided to try my hand at gluten free chocolate chip cookies (which apparently are not dairy free, sad face, I thought it would be).

First place I went to find this recipe was pinterest (obviously) and found a blog (Cooking Classy) I have been following for a while actually posted a gluten free chocolate chip cookie recipe.  Since this is a blog I trust I decided to try this one out.  I modified it a bit to fit what I could find in the grocery store.

Everyone at work said they were delicious and most couldnt even tell they were gluten-free (until after I told them).  Granted they are a bit more crumbly than normal chocolate chip cookies if you cook them just right they will stay pretty soft for a few days.  I was impressed with these, not enough to have them replace my browned butter chocolate chip loves (because browned butter yall) but its a nice option to have in my back pocket for those who suffer from a gluten allergy.


Gluten-Free Chocolate Chip Cookies

Servings: 28      Prep Time: 15min       Cook Time: 10min     Difficulty: Easy


  • 1 1/2 cups Betty Crocker Rice Flour blend***
  • 1 tsp baking soda
  • 1 tsp baking powder**
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup firmly packed light-brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract**
  • 2 cups chocolate chips (i used a mix of mini semi-sweet and regular milk chocolate)**
  • Fine Sea Salt, for sprinkling tops (optional)


  • Preheat oven to 375 degrees. In a mixing bowl combine rice flour blend, baking soda, baking powder and salt for 30 seconds, set aside.
  • In the bowl of an electric stand mixer fitted with the paddle attachment, blend together butter, brown sugar and granulated sugar until mixture is well blended and creamy.  Occasionally scrap down sides and bottom of bowl while mixing.
  • Mix in eggs one at a time, blending until combined after each addition. Stir in vanilla. Using low speed, slowly add in dry ingredient and mix until combined. Mix in chocolate chips.
  • Drop dough (I used a medium sized cookie/ice cream scoop) about 2 1/2 Tbsp at a time onto Silpat or parchment paper-lined baking sheets, spacing cookies 2-inches apart. Bake in preheated oven 9 – 11 minutes until golden.
  • Sprinkle tops with Fine Sea Salt if desired, cool on baking sheet then transfer to a wire rack to cool completely. Store in an airtight container.

**Make sure none of your ingredients contain any of the ingredients listed here.  Main players though are wheat, barley and rye.  Some grocery stores (like HEB) will mark the price label of the shelf with a gluten-free tag.

***If you cant find the Betty crocker brand you need quantities as follows (but the betty crocker has all of that already):

  • 1 1/2 cups white rice flour*
  • 1/2 cup potato starch
  • 1/4 cup tapioca flour
  • 1 tsp xanthan gum

I was so tired this morning I almost thought about not running.  Then I let Oreo out to potty and OMG cool weather!!!


Yes that is 91% humidity, but oddly enough when its cooler I dont really mind it as much.  We had a great run with about a 10:30min/mile pace.  I felt great and am so happy I did the run.  I have my second presentation today and its larger than yesterdays.  Getting that boost of early morning endorphins was totally what this ol’ body needed!!

The puppies had a great time too but totally ready to go inside 🙂  I am so ready for fall to be here full time, its so silly what 10 degrees in the morning does for you run.  Hopefully my September race will be in the same temperature range, that will make for a great race!

So Sore!

Yesterday was a tabata class and oh man…sore today!  I didnt run as far this morning because some of the sore muscles were muscles I need to run 🙂  Its good to get up and get moving though, I find it helps ease the stiffness but I usually dont go as far when sore muscles in my legs strike.  I have 14 miles on tap for this weekend so I need to be cautious if I want to finish.


Good stretch after a run is always nice, with a puppy dog supervising of course.  I have been wearing my compression socks more lately.  My shins have been bothering me, I dont need another flare up of shin splints.

Short post today, there is a lot going on at work and I have to stay on top of my stuff 🙂

D23 Expo 2015 Recap

I think I am finally ready to write about D23 Expo.  It was fun, but it was also frustrating.  I have seen quite a few other people write about their experience and it seems the same for them too.


First day for us was Thursday, a preview day for sorcerer guests.  For those of you who dont know the sorcerer package was a “premium” package for people to basically be guaranteed a seat at all events, a preview day, first in line for shopping, first to the expo floor, a lounge during the expo, and other perks (but those were the main ones).  Ill detail this year vs last year at the end.


Thursday we walked the expo floor, picked up our pre-purchased merchandise, heard about the “game plan” for the weekend, made sure our schedule was in order and enjoyed refreshments.  That night was a fireworks viewing party with light refreshments.  I didnt go to this because I did it last year and I wanted to see World of Color, but Joe went and said it was ok.

Friday is when the real fun started….

We met legendary Imagineer Joe who helped design Aulani and is currently working on Pandora, the new addition to Animal Kingdom.  We saw the “preview center” for Shanghai Disneyland and now I want to go to Shanghai thank you very much.  The best panel of the day was the Inside Out Panel where they discussed the process of making the movie and how it evolved into what was presented in theaters.  Very cool.

We also had the Disney Animation panel which featured movies we already knew about but got some interesting sneak peaks into Moana.  Zootopia is going to be fantastic, Finding Dory should be good, Toy Story 4 is going to be directed by John Lasseter himself, Good Dinosaur is NOTHING like what last D23 showed which I cant figure out is a good thing or a bad thing, Gigantic which is the Disney take on Jack and the bean stalk (really, do we really need another jack and the beanstalk movie) and Coco a movie about Dia de los Muertos (promising).  Stars we saw included Ginnifer Goodwin, Ellen, Dwayne Johnson, Ed O’Neil, Ty Burrell and a few others that I wasnt really familiar with.

All in all friday was a slower day with the only big panel being the animation panel.  We had a few smaller ones but none really stick out (other than the Inside Out panel).  Friday before the panel we did the most exploring of the expo floor all in all was a good day.  Also, can you tell you I was DisneyBounding as this day?

Broadway Originals, featuring Ashley Brown (Mary Poppins), Josh Strickland (Tarzan), and James Monroe Inglehart (Genie).  Ive seen shows similar to this before and loved all of them.  These are true performers and really know how to capture the audience.  I saw the second showing of this and for the last number Josh actually messed up the beginning of “Let it Go”.  I bet he was mortified but I really loved it.  Not because he messed up but because it was a human moment that can happen to anyone and is just so relate-able.  He recovered wonderfully and made me love him even more!  Also…Marvel photo-op!

The “Once Upon A Time” panel was great.  I really hate interviews with the show creators because they never give any information.  Why come to an interview if you arent going to answer questions.  I get not wanting to spoil any details but with these guys its at the point of being ridiculous.  Luckily Ginnifer Goodwin and Lara Parilla (Snow White and Evil Queen) saved the day and surprise appearance by Josh Dallas (Prince Charming) totally saved the panel.  They were charming and perfect.

Meeting Ginnifer and Lara in person and having both of them love my skirt (Lara’s face in this picture is awesome!) was unexpectedly amazing and now I dont want to sell the doll I didnt want Joe to buy in the first place…dont ask…long story lol.

Saturday was also the Live Action panel and the parks panel.  we actually skipped the parks panel because I decided I wanted to see the Broadway Originals show and try and meet them (which the line was full and I didnt get to but ended up meeting OUAT cast so it all worked out).  The Live Action panel was a little un-inspired.  Movies they showed were ones we already knew about but did get to see trailers not yet seen.  Captain America (looks epic), Doctor Strange (Benedict Cumberbatch!!!), Jungle Book (surprisingly emotional), Pete’s Dragon (why), Alice Through the Looking Glass (meh), Pirates of the Caribbean (yes please), Beauty and the Beast (its a musical and its going to be awesome).  Marvel showed their timeline (already all over the internet) and StarWars showed their timeline (again, already all over the internet).  The real news was the announcement of Star Wars land coming to both sides of the country.  This is really going to be something special with a fully-immersive experience.  I cant wait to go and experience this myself.  Celebrities we saw were Chris Evans, Chris Pine, Ben Kinsgley, Lupita Nyong’o, Harrison Ford, Johnny Depp (in full Captain Jack Sparrow costume!), Anthony Mackie, and a few others that I dont really know.

Wow, Saturday right!  Such a busy day!  Now Sunday, by far the most chill day.

Alice Through the Looking Glass had this awesome photbooh-esk thing where you could make yourself into characters from the movie and then make a movie (which I cant upload here for some reason) and a still.  A really cool concept, executed really well.

We didnt have anything big on tap for today, some small panels and walking the expo floor.  Joe went to the interactive panel (for games) but I didnt have any interest in this and went to smaller panels like Disney Merchandise, Disney beyond the parks, Destination D23 and a few others.  Sundays tend to be the lame day and disney really needs to get it together on this.  So much you cant do it all on Saturday, then nothing really interesting on Sunday. Silly.

All in all, the expo floor this year was much better than years past.  Some booths had some really interesting give-aways and set ups.  The presentations were lack-luster and really were missing the insider, never had even a whisper of it kind of news.  I was really disappointed since the reason I go to these is to get the scoop!  There were way too many people, lines mismanaged, communication breakdown on all levels.  You would think after 4 expos they would have this down but apparently not.

As far as the sorcerer package goes…totally not worth the price of admission.  Promised a Samsonite carry on luggage piece, received an american tourist tote bag.  Swag in the bag was lame and almost all of it was from Teen Beach Movie 2.  No other swag was given as in previous years.  Refreshments were popcorn and pretzels, where as previous years but much better quality of snack.  There was a silent auction for sorcerer guests only but Ethan Allen (no joke) outbid and stalked almost all auction items so no one else could bid or win.  Every aspect of the package was disappointing and left me wondering what my money went towards.

At the end of the day I dont think we will go back in 2017, I just dont feel the quality delivered matched the price of admission quite literally.  This will be my 3rd expo and am sad to say it was a let down.  I had fun with the people I was with but I can do that outside the expo.  I think next convention will be San Diego Comic Con, I want to see what all the fuss is about!

When Life Gives you Pink Eye…

I cant officially tell if I have pink eye or not but its a possibility.  I woke up this morning (TMI) with crap all over my right eye and it was pink-ish.  No light sensitivity or the other symptoms that would indicate the super contagious version just the semi contagious version (only if you touch your other eye).  To be on the safe side I am wearing my glasses today.  Sooo not looking forward to running in my glasses.

20150822_064736Look the sky is pink today too!  I got to the track at about 5:45am and no one was there.  It was really nice.  My goal was to do 12 sets of 800’s today.  I mixed it up a little and did the following:

  1. 800 (2 laps around the track)
  2. 1600 (4 laps around the track) marking the time for the 800 split.  Since I was by myself this was a little difficult.  I had to remember the time I finished my first split and then do math to figure out the second split plus do the right amount of laps.  It got a little confusing but I was just using my watch.  Im sure there are apps you can use to figure this stuff out but I thought my husband was going to help this morning 😛

Each set of 800’s were between 4:47-5:05 averaging a little less than a 10 minute mile.  I keep thinking to myself this is really slow but then remember that when temps + humidity get over a certain point you just dont go as fast (more info here).  This is really encouraging since the average 10min/mile is faster for me than previous times.  I can only get faster during the fall and Im looking forward to that.

20150822_072218After the sun started coming up, such a nice sunrise today.  Running the track today was better then previous sessions.  The times definitely were not my best but I did all the laps I planned on at times that I wasn’t too disappointed with.  I think I get a little overwhelmed with all these fast runners making PRs everywhere I have to stop and remember I am doing well for me and its not fair to compare myself to elite runners.  I dont devote my life to the sport so Im not going to see the same results nearly as fast or at all.  Perspective (this always makes me think of Ratatouille…Disney’s in my blood yall!)

Life Changing Rice Krispie Treat (Foodie Friday #4)

Are you ready for a life changing dessert?!?  Ok good, because I made these a little by accident and it turned out FANTASTIC!

I love making rice krispy treats.  They are so simple, take very few ingredients and just make people happy.  I am constantly trolling pinterest for all kinds of pins and came across this pin claiming to be the “perfect” rice krispie treat.  The name is pretty spot on, but I think I made it EVEN better.  Going through my stash of marshmallows and rice krispy cereal I noticed I didnt have mini mallows, spiraling me into an ascent of amazingness.  (someone is full or superlatives today).

All I am going to say before I post the recipe is this…browned butter.

Rice Krispy Treat

Life Changing Rice Krispie Treat
Adapted from Cookies and Cups
Servings: 16   Prep Time: 5min  Cook Time: 15min   Cool Time: 1hr    Difficulty: Easy
  • 10 Tbsp butter (reduces when browned, actually only need 1/4cup)
  • 8 cups, plus 2 cups marshmallows (I used regular and jumbo)
  • 6 cups Krispie Cereal
  • ½ tsp sea salt
  1. Line a 9×9 pan with foil and spray lightly with cooking spray, set aside.
  2. Brown Butter!!  Bakingdom has a great tutorial here with pictures that are really helpful.  Here are the basic steps, but check out her blog I love her.
    1. Pick a pot.  If you want to use the same pot to brown the butter as the melting the marshmallows then use a larger pot.  If you just want to brown the butter a small/medium pot will do just fine
    2. Cut the butter up into chunks and add to pot.
    3. Turn the heat on your burner to about medium high heat.  Once the butter starts to simmer, use a silicone whisk and whisk constantly.
    4. The butter will start to foam, this is the water cooking off, totally normal.  The foam will dissipate and will be a milky yellow.  Keep whisking, it will foam one more time.
    5. After the second foam the butter will start to turn a deep brown and smell nutty and delicious.  Be really careful because if you wait too long it can burn, not long enough and the rich taste wont be there.  (seriously, check out Bakingdom for the pictures, it helped me immensely)
    6. Let the browned butter cool slightly.  Enjoy the wonderful smell that is browned butter 🙂
  3. Add in 8 cups marshmallows, stirring constantly.  If you are using jumbo mallows you might want to tear them up so they melt faster.  Totally your call though.
  4. Once the marshmallows are just melted remove from heat and stir in your cereal and salt until just coated in marshmallow mixture. Now stir in the remaining 2 cups of regular marshmallows.
  5. Pour mixture into prepared pan and press in evenly.
  6. Allow to cool completely before cutting into squares. Best if served same day.

Notes:  Sea salt has a stronger flavor and gives a nice compliment to the browned butter, you can omit if you arent a fan.  You can use mini marshmallows for this but I found that the bigger marshmallows made for nice chunks once they had cooled.  The mini mallows melt better in step 2 though.

Brown Butter Notes:  It was tricky the first couple of times I tried to make it.  Just be patient and have plenty of butter on hand.  I use unsalted butter because salted butter is never really consistent with the salt making it hard to gauge with recipes.  You can also make a lot of this, use what you need and store the rest.  I have kept brown butter for 6 months and when I came back to use it just melted it in the pan like normal butter and it was perfect.  Make sure when you scrape out the pan you get all the brown bits around the side and at the bottom, thats what really enhances the flavor.
