Taco Salad (Foodie Friday #6)

Happy Friday everyone!!!  I am home today because I took the day off, nothing like a 4 day weekend for me!!!

Granted I have been working hard on projects for my Harry Potter themed party but I did sleep in and thats always a good thing 🙂  I had to run some errands today which included Joann’s.  Yall…I was there for an hour!  I had to wait 45minutes to get 1 bolt of fabric cut then another 15 minutes to check out.  Every time I have been to Joann’s I have had to deal with stupid long waits.  Is it just me, is this store just grossly understaffed or does this happen to you too?

Anyway…on to the recipe for today.  I made a delicious taco salad this week.  It is really filling and excellent left over.  I calculated the calories using My Fitness Pal and its right around 310 calories.  Not bad for a decent filling salad.  Granted that is using only the ingredients listed here, any other toppings will change that calorie count.  Try it out, Im pretty sure you’ll like it 🙂

Taco Salad

Adapted from Six Sister’s Stuff

Servings: 4            Prep Time: 5min          Cook Time: 15min              Difficulty: Easy

Ingredients

1 pound lean ground turkey
1 tbsp taco seasoning*
1 (16 ounce) can kidney beans
1 cup Kraft Lite Catalina salad dressing
1/2 cup water
1 head iceberg lettuce
2 Roma Tomatoes diced
2 avocados diced

You can add additional toppings such as: olives, sour cream, salsa, tortilla chips, etc

Instructions

In a large skillet over medium-high heat, brown the ground beef and drain excess fat. Stir in the taco seasoning, chili beans and Catalina dressing. Add 1/2 cup of water. Bring to a boil, reduce heat and simmer for 15 minutes.

While the meat is simmering, prep the salad bowls.  If you are using some as leftovers make sure and put some lime juice on the avocados to keep them a little fresher.  Add the lettuce, avocado and tomato then top with the meat when its ready.  If you are using leftovers make sure and put the meat in a separate container or the lettuce will get really soggy and nasty.  Enjoy!!

*I make my own taco seasoning, you can use the package mix but i find the make your own tastes better and you can customize it to your taste preferences.  Check out this link to find the taco seasoning i use.  I dont use as much chili powder for a milder flavor.
