Shrimp Taco Salad (Foodie Friday #20)

Im pretty surprised this week went by as fast as it did, but hey Im not complaining!

Today’s recipe is a lighter taco salad.  I made this before the new year because its always a good time to eat wholesome foods.  This particular salad was really easy to put together and was pretty good leftover.  I would say if you are going to have it leftover to put the shrimp and tortilla strips in a separate container from the lettuce so things dont get soggy and you can reheat the shrimp if you want.  I personally dont like cold shrimp in a salad so I like to warm them up.

Shrimp Taco Salad

Servings: 4         Prep Time:  15min       Cook Time: 20 min     Difficulty: Easy

Ingredients

  • 1 pound medium shrimp, peeled and de-veined (use the raw grey shrimp)
  • 1 1/2 tsp olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • pinch cayenne pepper
  • 2 tsp lime juice (I use bottled)
  • 1 tsp honey
  • 1/2 tsp salt
  • 3 corn tortillas
  • 1 head Boston lettuce, chopped
  • 1 large avocado, pitted and diced
  • 5 radishes, thinly sliced
  • 1/2 red onion, thinly sliced
  • Salsa for serving

Instructions

Preheat oven to 400 degrees.

In a medium bowl, combine the shrimp, 1 tsp of oil, chili power, cumin, cayenne, lime juice, honey, and 1/4 tsp salt.  Cover and refrigerate.

Stack the tortillas on top of each other and slice in half, then crosswise into strips.  In a bowl toss the tortilla strips with the remaining 1/2 tsp oil and remaining 1/4 tsp salt.  Spread the strips on a cookie sheet and bake until they are crisp and beginning to brown, about 12 minutes.

While the strips are baking pour the shrimp onto another cookie sheet and bake until the shrimp are opaque, about 8 minutes.

Evenly divide the lettuce, avocado, radishes, red onion, and shrimp.  If you are using leftovers sprinkle some lime juice on the avocado to keep it from browning fast.  Sprinkle the tortilla strips and top with salsa.

Notes:  You can top with chopped cilantro and lime wedges but I hate cilantro and am not big into lime wedges so I left that out.  You can also use pre-made tortilla strips and pre-cooked shrimp but to me it doesnt taste as fresh that way.

      they actually turned out really well, very crispy and help up pretty well leftover. i was surprised in a good way!
