Paella (Foodie Friday #24)

There are only a handful of recipes I repeat.  With pinterest, recipe books, bloggers…there really is an endless stream of new recipes to try and no real need to recycle old stand-bys.  That is unless you LOVE that old stand-by and its STUPID easy to make.  Enter PAELLA.  If you’ve never heard of paella before its a Spanish dish that is made up of rice, some veggies, and some meats.  I say that vaguely because the beauty of this dish is you can do pretty much whatever you want and it will taste delicious.  I stick with chicken and shrimp but the sausage component is pretty much different every time.

When I say stupid easy, I mean it.  You mix everything into a aluminum tin, throw it on the grill then serve.  1 dish, and no cleanup if you don’t re-use the tin (we do, but sometimes the tins don’t last forever).  I love this salty, flavorful dish and I’m sure you will too.

Side note…I promise better food photography is a goal of mine…I was just way to hungry to do that today.  Also I need dishes that aren’t Disney…#firstworldproblems lol


Paella (adapted from here)

Servings: 8    Prep Time: 10 minutes      Cook Time: 30 minutes      Difficulty: Easy


  • 2 cups uncooked Spanish rice
  • 2 1/2 cups low-sodium chicken broth
  • 12 large shrimp, peeled and de-veined
  • 4 boneless chicken thighs
  • 4 oz chorizo or 2 links chicken sausage (sliced) or 2 links sausage (sliced)
  • 1 jar low sodium pimento-stuffed olives
  • 1 jar roasted red pepper strips
  • 1 tsp smoked paprika
  • sea salt and black pepper to taste (I usually don’t use the pepper though)
  • Olive oil


Preheat grill.  Combine all ingredients in an aluminum pan, mix to combine then drizzle with olive oil.  Cover with aluminum foil and place on grill at medium-high heat for 30 minutes.  Remove from grill, carefully remove foil covering then serve.

Notes:  This dish can easily be multiplied or paired down.  If you don’t like olives or red peppers you don’t have to use as much but I like the added flavor so I use a whole jar (the smaller size not the jumbo jars).  If you don’t like shrimp take that out and just add more of the chicken or sausage.

  1. Mmm. I’ve only had paella once, but it was delicious. Every recipe I’ve seen since seemed to have a million ingredients. Not an olive fan, but I would probably add some diced onions in there. Think this would work in a deep pan on the stove, or a wok?


    1. I dont think a wok would work but a deep pan in the oven should work. If you do the oven option make sure and cover it tightly with aluminum foil. Its the steam action that cooks the rice. onions would be a good addition!
