Peach and Prosciutto Pizza (Foodie Friday #31)

Since I cant have pizza right now, it seemed only right I share a unique pizza recipe with you today.  I have made this a few times and really love it.  I don’t know what it is about the flavor combo but its just works so well.  My brother, who firmly believes fruit does not belong on a pizza, even said this was pretty good.  Coming from him that’s a big compliment!
Since peaches are now in season and I want yall to enjoy all things carbs, I hope you enjoy this delicious recipe, and report back!  Truth be told it took me a few times to get the balsamic reduction right and be warned, it does stink up the house a little 🙂

Peach and Prosciutto Pizza 
Servings: 1 pizza         Prep Time: 30minutes        Cook Time: 8min          Difficulty: Moderate

  • 1 serving pizza dough (recipe here)
  • 1 Tbsp olive oil
  • 1 clove garlic, finely minced
  • Salt and freshly ground black pepper
  • 3 oz prosciutto
  • 1/2 cup ricotta cheese
  • 5 oz fresh mozzarella, diced into small cubes
  • 1 1/2 medium fresh peaches
  • 1 cup balsamic vinegar
  • 1/4 cup honey
  • Flour, for dusting
  • 5-6 basil leaves, whole or sliced
